Ginger Stir Fry

We love a quick and easy stir fry for dinner that uses lots of fresh veggies and flavors. This recipe could be made with any combo of veggies. We chose snap peas, yellow bell pepper and broccoli. Also for those of you who eat meat, feel free to substitute a lean meat like chicken for the tofu.

Prep time: 20 minutes

Cook time: 10-12 minutes

Makes 2 dinner servings

 

 

 

Ingredients:

  •  Florets from one small crown of broccoli
  • 3/4 of a large yellow bell pepper, cut into strips
  • Three handfuls of snap peas, trimmed
  • One package of extra firm tofu — rinsed, drained and cubed. 
  • 1/2 box of soba noodles
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh grated ginger
  • Two cloves of garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon ground black pepper

Instructions:

  1. Whisk together all wet ingredients, ginger, garlic, red and black pepper in a small bowl.  Set aside.
  2. Wash and prep all veggies.
  3. Boil a pot of water for the soba noodles and cook as directed on the box.
  4. Heat a wok on medium-high heat with 1 tablespoon of oil (vegetable or sesame).
  5. Add tofu. 
  6. After about two minutes, add half of the ginger dressing.
  7. Adding veggies to the tofu, cook for approximately four minutes.
  8. Add the remainder of the ginger dressing.
  9. Cook for another three or four minutes, depending on how crisp you like your veggies to be after cooking.
  10. Serve your stir fry over those yummy soba noodles!
